Try These Delicious Southwest Quesadillas!

What is a "Wicable"?  It's an easy and fun recipe using ingredients that are part of the WIC Nutrition Program.

Here are your ingredients!

Makes 1 quesadilla each, 2-3 quesadillas serves 1.

  • 1 taco-sized wheat tortilla
  • 2 handfuls shredded monterrey jack cheese
  • 1 1/2 tbsp seasoned black beans
  • 1 1/2 tbsp corn
  • 1 1/2 tbsp diced green bell pepper
  • Chopped jalapeños*
  • Green Tabasco sauce*

*not available with WIC vouchers

PREPARATION

Saute diced green bell pepper in medium pan. Set aside. Prep pan with non-stick spray, put tortilla in pan. Add 1 handful of cheese, 1 1/2 tbsp of beans, corn, pepper. Top with cheese. Fold and flip until crispy. Serve hot.
