Wild Food and Fermentation Workshop

ASAP, the Appalachian Sustainable Agriculture Project sponsors many great events throughout the year, from tailgate markets, vegetable-growing classes, farm tours, to even food preservation workshops. In fact, they have a great workshop coming up beginning July 27th on Wild Food and Fermentation.

For thousands of years, humans have enjoyed the distinctive flavors and nutrition resulting from the transformative power of microscopic bacteria and fungi. In this week-long workshop, you will take a whirlwind trip through the wide world of fermentation, providing you with basic and delicious recipes that are easy to make at home. These great classes will be hosted by Sandor Katz.

You will learn about:

  • Fermented vegetables: kraut and kimchi
  • Fermented grains: flat bread and sourdough
  • Fermented dairy: simple cheeses and yogurt
  • Fermented alcohol: mead, cider, wine, and beer
  • Fermented beverages: kombucha and natural soda
