What is a "wicable"? It's an easy and fun recipe....using ingredients that are part of the WIC Nutrition Program.
Here are your ingredients:
- 1 garlic clove
- 1 diced onion
- 1 diced bell pepper
- 1 shredded carrot
- 1 can tomato puree
- 1 can diced tomatoes
- 1 can black beans
- 1 can kidney beans
- 1 can great northern beans
- 1 can white corn
- 2 packs of chili seasoning
- 1 pack of shredded cheese (optional)
PREPARATION
In a pan, sauté garlic, onion, bell pepper and shredded carrot until lightly browned. Stir in 1 pack of chili seasoning. Remove from heat. In a large pot, add 1 can tomato puree, 1 can diced tomatoes, 1 can black beans, 1 can kidney beans, 1 can great northern beans, and 1 can white corn. Stir in remaining seasoning pack over heat. Stir in sautéed vegetables. Cover and sit for 15-20 minutes, stirring occasionally. Serve with shredded cheese (optional). Makes 6-8 servings. Enjoy!
