Try an ABC Salad!

What is a "Wicable"?  It's an easy and fun recipe....using ingredients that are part of the WIC Nutrition Program.

The ABC (Avacado, Black Bean, & Carrot) Salad:  

Here are your ingredients!

Serves 8:

1 can Black beans (16 ounce) or 2 cups cooked black beans
2 medium carrots, diced
2 medium tomatoes, diced
1/2 medium red onion, diced
1/2 avocado, diced
1 tbsp olive oil
salt and pepper to taste

In a large bowl, mix beans, carrots, tomatoes, red onion, and avocado. Toss with olive oil and season with salt and pepper. Serve chilled. Refrigerate leftovers.
